After the harvest, which is carried out entirely by hand, the grapes are taken to the new cellar for vinification; fermentation is triggered in a completely natural way, thanks only to the use of indigenous yeasts, i.e. naturally present on the skins.

The goal is that of making wine with our own grapes, with “local” grape varieties, rather, grape varieties that the environment has chosen and styled in order to transmit the originality, the personality of this place: Umbria.
PERTICAIA is the word with which, in the archaic language of Umbria, the plough is called, the instrument that, more than any other, marks the passage from sheep farming to agriculture.
